Everyone loves a fast dish right? White fish like tilapia, mahi mahi, roughy and all those other light white fish cook up really quick and are great to have in the kitchen for a last minute dinner.

There is a trick to cooking fish without drying it out. Make sure the fish is thoroughly thawed. I just throw them in a bowl of water for 20-30 minutes prior to cooking and that usually does the trick.

I used mahi mahi in this recipe, but you can use most any white fish that you like. The recipe isn’t spicy, but it packs a punch of flavor. Serve it with rice and salad or flake it up to use in tacos.
