What’s great is that these muffins are so moist, there is no need for frosting. Perfect to bring to a party or a “just because” dessert to bring to work. Trust me, everyone will love them.
As for the ingredients, Libby’s Pumpkin puree cans are usually fairly cheap and ring up around $2. I stock up when they are on sale. Spice Cake mix is the only other ingredient you need. Any brand will do, but Duncan Hines is what I tend to use because it is always on stock at the grocery store.
These muffins can be doctored up too, so get creative! Adding some diced up apples sprinkled with cinnamon gives the muffins texture and flavor that can keep the fall spirit alive all year round.
If you don’t have a muffin tin, shoot for cookies instead. Just place rounded tablespoon full balls of dough an inch apart on the baking sheet. The cooking time will be the same. If you’re feeling ambitious, add some chocolate chips for pumpkin chocolate chip cookies. But who are we kidding?
