My birthday was a little while ago and you can bet that I had these lovely birthday cake flavored pancakes for breakfast. Why are pancakes soooooo good?

I think it’s the fluffy-ness. I’m pretty sure I’m in love with bread solely for that reason.


Yes, a big stack of pancakes on your birthday, or any day for that matter. These are healthy so it makes it ok. “How?” do you ask? Well, whole wheat pancakes mix and egg whites. Protein + carbs topped with almond butter and sprinkles.


I use Kodiak Cakes pancake mix. It allows me to be lazy, not having to mix up flour, baking soda and all the extras. For 1/3 cup, you get 130 calories, 27 grams of carbs and 4 grams of fiber. Not bad for pancakes. The ingredients are good too: 100% whole grain wheat flour, 100% whole grain oat flour, non-fat dry milk, dry honey, leavening, egg whites and sea salt.

I won’t keep you any longer, it’s breakfast time!

  • ¼ cup Kodiak Cake Mix
  • 1 Tbsp coconut flour
  • ⅓ cup egg whites
  • 1 Tbsp multi-colored sprinkles
  1. heat sprayed pan on medium low
  2. mix all ingredients
  3. drop mix on to hot pan, allow to cook and rise
  4. flip when slightly browned on the underside
  5. makes 2 5 inch diameter pancakes or 4 3.5 inch diameter pancakes
