So this recipe isn’t for wings… I know, sad day. But it can satisfy those wing cravings though! This chicken tastes like those spicy buffalo wings you get at sports bars, but it’s lean and mean without the mess. It’s delicious and really easy- it hardly takes much time besides browning the chicken.


You can serve it up with sweet potato fries (or regular if thats what you like) or green beans. Making a buffalo chicken salad also tastes great and turns our really pretty. I haven’t tried stuffing it in a wrap yet, but I’m sure it would be really good with a bit of ranch drizzle.


Be careful, it’s spicy! Geoff and I like hot stuff, but if you aren’t as fond of it, just put in half as much cayenne to tone down the heat.

Healthy Buffalo Chicken (not)wings

  • 4 boneless skinless chicken breasts, thawed
  • ⅓ cup rice wine vinegar
  • 2 tsp chili powder
  • ½ tsp cayenne powder
  • 1 tsp paprika
  • 2 tsp garlic powder
  • ¼ tsp salt
  • ½ packet truvia
  1. Dice chicken breasts and brown over medium heat in a sprayed pan
  2. whisk together remaining ingredients and pour over chicken once cooked
  3. allow mixture to come to a boil and remove from heat
