Oatmeal Peanut Butter Dark Chocolate Chip Cookies.I really love these cookies. They are so easy and quick to whip up, and they don’t require any special ingredients. They’re healthy, really they are, even though the pictures may not look it.
Usually it’s my husband with the raging sweet tooth, but these cookies do it for me too. Maybe it’s the peanut butter matched with dark chocolate? Can’t go wrong there. Hopefully I can make them last more than a week, but you know they’ll end up with my casein each night.
I think they go best with Ghiradelli 60% Cacao Chips. The chips are wider and flatter, making it seem like there is more chocolate along with a more flavorful taste than normal milk or semisweet chocolate chips. Oatmeal helps them to hold their shape well. I used Quakers Old-Fashioned Oats, but you can use quick oats if you want.
This is a recipe that I put up some time ago, back before I started my personal training career. Things have changed a lot since then, so I decided it was time to revamp the recipe and the pictures.
Here’s the recipe…
- 1⅓ cup oatmeal
- ⅓ cup whole wheat flour
- ½ tsp cinnamon
- ¾ tsp baking soda
- ½ packet Truvia
- ¼ rounded tsp sea salt
- ⅔ cup applesauce
- 2 tsp vanilla extract
- 2 tbsp sugar free maple syrup
- ½ cup peanut butter (natural and processed both work)
- ¼ cup dark chocolate chips
- Preheat oven to 350
- Mix all ingredients, add dark chocolate chips last
- Drop on to cookie sheet
- Bake for 14 minutes
